Fluffy Keto, Sugar-free & Gluten Free Blueberry Pancakes for One

Am I the only one who wakes up craving pancakes?


But…maybe it’s a weekday or you don’t have much time in the morning to make them. And then the next problems arises…you google “easy gluten free pancakes” and a billion results pop up. Which one do you choose?!


Well, don’t worry, I have done the research and testing for you!


I tested out some quick, easy, keto, gluten free pancake recipes and here are TWO of my favorites. 


And, even better – they took about ten minutes to make with simple ingredients!

Keto, Gluten-free, Sugar-Free, 10 Minute Pancakes for One: Version One


Ingredients

1 whole egg

1 tbsp. of melted butter

2 tablespoons of keto maple syrup (if you’re not keto, you can use honey)

½ cup almond flour

½ tsp. baking powder


Instructions

Mix all wet ingredients together in a medium sized bowl. Then add all the dry ingredients and mix till combined. Add some butter to the pan and cook until the bubbles start to form.


Makes 1 serving, about 2 and ½ pancakes.

Carbs: 5g

Fiber: 3g

Protein: 9g


Keto, Gluten-free, Sugar-Free, 10 Minute Pancakes for One: Version Two


Ingredients

1/4 cup almond flour

1 tbsp. coconut flour

½ tsp. baking powder

3 tsp. granulated sweetner (I used Truvia)

1 egg

2 tbsp. of butter


Instructions

In a bowl mix the wet ingredients together using a whisk. Then, mix in the dry ingredients. Let the batter sit for a few minutes to thicken. You may need to add some water if the batter is too thick.


Cook in a stove-top pan for a few minutes. Enjoy!

Cal: Approx. 220 calories

Carbs: 5g

Fiber: 2g

Protein: 7g

Makes one serving, or about 2 - 3 pancakes.
