Easy, Low FODMAP, Gluten-free, Gnocchi

Gnocchi is definitely a trending food item! It seems as if every health and wellness influencer has been posting about this product.

I tried potato gnocchi for the first time last week and was BLOWN AWAY. I absolutely loved it and wanted to share.


First of all, what is gnocchi? 


Gnocchi is Italian soft dough dumplings traditionally made from semolina, eggs, potato, cheese, demolina, wheat flour, breadcrumbs, or similar ingredients. Flavorings can be plain, or possibly herbs, vegetables, prunes or cocoa, depending on the recipe. Gnocchi are a vary good base for creating all kinds of meals for breakfast, lunch, dinner or dessert!


You can buy Gnocchi (gluten-free!) at Trader-Joes, Whole Foods and we got ours at T.J. Maxx. You can pretty much find them anywhere or make them yourself.


Our recipe uses potato gnocchi. So, grab whichever type of gnocchi you prefer and follow along for an easy, less than 10 minute recipe!

Recipe


Ingredients: 

1 package of potato gnocchi

Water

Salt (to taste)

1/3 cup Fody Spaghetti Sauce

1/4 cup dairy-free cheese for topping. 


Steps: 

1. Boil water in small pot. 

2. Add potato gnocchi, cook for two minutes or until the gnocchi floats to the top of the water. 3. Drain gnocchi. 

4. Add pasta sauce & cheese. 

5. Enjoy!
