Low Sugar, Easy, Homemade Mango Preserves

Yesterday, at a farmer’s market in my hometown, my grandmother stumbled upon baskets of vegetables for sale. And, with these baskets, the seller was giving away huge boxes of mangos because they were ripe and starting to go bad.

We now had 30 thirty mangoes. I wanted to try to save some of them but there was no way we could eat them before they started to go bad. So we froze some of them for smoothies later on, but the rest I decided to chop up and make preserves!
This recipe is super easy and you can use any type of fruit. We wanted a lower sugar recipe so we decided to use a sugar substitute.

Recipe
1/3 cup granulated sugar (we used Truvia)
3 cups of chopped mango
1 tablespoon lemon or lime juice
Method
1. Mix all the ingredients together in a small pot on the stove.
2. Bring mixture to boil.
3. Reduce to simmer for 15 minutes or longer under the mixture has thickened.
4. Take off and cool the preserves. Refrigerate and eat for up to 1 week.
