Gluten-Free, Dairy-Free Strawberry Oatmeal Bars

Since our whole family is stuck inside, we’ve been cooking WAY more than we should be. However, I can’t say I’m upset by this because of all of the delicious recipes we’ve discovered.

SO, here’s another mouth-watering recipe for my fellow oatmeal lovers! These oatmeal bars take very little time/effort to make and are pretty healthy (besides the added sugar in the strawberry jam/jelly)!

I’ve made these oatmeal bars twice this week and they have quickly become a family favorite! Give these bars a try and let us know how you like them!

Ingredients:

1 cup oats

½ cup almond flour

½ cup quinoa flour

¼ teaspoon salt

¼ maple syrup

¼ melted coconut oil

1 egg (or flax egg)

Strawberry jam/jelly

Instructions:

First, preheat your oven to 350 degrees and line a 9” baking pan with parchment paper.

Mix together the dry ingredients, then the maple syrup and coconut oil. Add in the egg or flax egg and stir until combined.

Press the dough into the 9” baking pan, setting aside a little for the topping. Bake for 14-15 minutes.

Spread the strawberry jam/jelly evenly over the dough. There is not a specific measurement for the amount of jam, so just use however much you think is necessary for your taste. Sprinkle the remaining dough on top of the jam.

Bake for another 20-25 minutes. Let the oatmeal bars cool completely before slicing into squares.
