Low-sugar, Dairy-free, Gluten-free Chocolate Chip Granola

Now that the country is on lock-down, Renee and I have come home - back Texas. We have a lot more time to cook...and bake...and blog. So, you're in luck! There are more delicious gluten-free, dairy-free recipes coming your way!


A few days ago, I woke up early and whipped up this granola. It makes a great snack or a fantastic topping for smoothies, yogurts and just about anything else.

Ingredients

  • 1/2 cup pumpkin puree

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon kosher salt

  • 1/3 cup pure maple syrup

  • 3 tablespoons sugar substitute (I used Truvia)

  • 1 teaspoon pure vanilla extract

  • 3 cups old-fashioned rolled oats

  • 1/4 cup ground flax-seed, chia + hemp

  • 1/2 cup pecans

  • 1/2 cup almonds

  • 1 egg white

  • 1/3 cup dairy-free chocolate chips


Method

1. Mix all ingredients together except the chocolate chips and the egg white.

2. Fold in chocolate chips and then mix in the egg white.

3. Spread granola out on a baking sheet in a thin layer and bake for 12-15 minutes at 350 F. Then, flip the granola chunks and bake for another 12-15 minutes.

4. Let the granola cool completely and enjoy!
