Low FODMAP Soft, Chewy Cacao Cookies

These cookies are some of the best gluten free cookies I have EVER made! They turn out moist and chewy, but a little crispy on the edges. The best part about them is they’re gluten & dairy free AND Low FODMAP!


Also, they are pretty easy to make! I’m a full-time college student with very, very little time on my hands - so I need recipes that use few ingredientes and are quick and easy.


I used this recipe, but adapted it because I didn’t have dairy-free chocolate chips.


Instead of the chocolate chips, I added three and a half tablespoons of cacao powder. I also did not chill the dough overnight, I let it sit in the fridge for around 15-20 minutes before baking.


Finally, I set the oven temperature at 350 degrees instead of 375 and baked the cookies for a couple minutes longer.


Ingredients

2 1/3 cups gluten free all-purpose flour (I used the Pillsbury Gluten Free All-purpose Flour)

1 teaspoon baking powder

1 teaspoon salt

1 cup unsalted butter at room temperature (I used Earth Balance Soy Free Buttery Spread)

1 cup firmly packed brown sugar

½ cup sugar

2 teaspoons vanilla extract

2 large eggs, room temperature

3 tbsp cacao powder (optional)

1 cup chocolate chips of choice (optional)


Method

Preheat the oven to 350 degrees.


1. Combine the flour, baking soda, and salt and set aside.


2. Using an electric mixer, beat the butter until creamy. Add both the brown sugar and sugar and beat until lightened (around 2 minutes). Add vanilla and eggs, allowing each egg to be fully integrated before adding the next.


3. Slowly add the flour mix and beat until just combined. At this point, you can fold in chocolate chips or nuts.


4. Cover dough and chill in the fridge for 15-20 minutes. Then, place tablespoon sized balls of the dough 2 inches apart on your cookie sheet. Bake for 9-11 minutes.


Tips:

- You can add whatever you want to the cookies. I added cacao because I was craving chocolate and did not have any dairy free chocolate chips on hand. These would taste amazing with nuts or chocolate chips of any kind.
