Vegetable Meatball/Sausage Soup

This soup recipe is one of my all-time favorites! With juggling college, work, and an internship, I am always looking for recipes that are quick & easy but don’t sacrifice flavor or nutrition. I stumbled upon this soup a couple months ago and it’s become a staple for my weekly meal prep.


The original recipe is a vegetable soup with meatballs, however I have substituted the meatballs for different types of sausage and it turns out to be just as delicious. Also, you can pretty much throw any veggies want in there and it still tastes great.


In total, it takes about 15 minutes to put this soup on & eighteen minutes in a pressure cooker to finish it up. So, go try it out and let me know what you think!


Ingredients:

200g minced meat (I used ground turkey) or sausage

1 tsp ground paprika

Pepper and salt

1 bell pepper

1 large carrot or a handful of baby carrots

The green part of one leek

A few stalks of spring onion

1 liter of water or low FODMAP bone broth

Fresh Parsley


Instructions:


First, mix the salt, pepper, and paprika with the ground meat of choice. Roll into balls and set aside.


Chop the bell pepper, carrot, onions, parsley, and leek and throw them in your pressure cooker. Add one liter of bone broth or water and the stock cubes. Cook for 5 minutes, release the pressure, and add your meatballs or sausage. Cook for another 12 minutes.


Season with salt and pepper to taste.
