Versatile Ground Turkey Taco Meat

I don’t know about you, but I have always LOVED tacos. They are quick and easy to make, and taste delicious.


Since I have gotten in the habit of meal prepping, I’ve been using this recipe a lot because it takes about 15 minutes, if your rice is already cooked, and is very versatile. I usually prep enough for the week and then either eat it with corn tortillas, lettuce wraps, or in a salad.


Ingredients:

16 oz ground turkey, I use the leanest one I can find (usually around 90%)

¼ cup chopped spring onions (or more if you like onions)

½ can black beans, drained and rinsed

1 ¼ cup cooked rice

1 tbsp olive oil

Salt and pepper


Instructions:


Place the ground turkey in a pan with a little bit of olive oil (to prevent it from sticking) and cook until it is no longer pink. Add salt and pepper to taste.


While the turkey is cooking, sauté the spring onions in a pan with olive oil to your desired texture. Then, add the black beans and rice to the pan with the onions. After the meat and veggies are finished cooking, combine them. Viola! You’re all done!


Pair this with a warmed corn tortilla, fresh lettuce wrap, or in a taco salad for a quick, easy, and delicious lunch or dinner recipe!


Note: I add different spices every time I make this, so experiment with some and figure out what you like best!
